We are beyond excited about this book. Miyoko Schinner appears to have finally broken the code and cheese loving vegans can all rejoice in her creations. Vegan gruyere, brie, cheddar, mozzarella, ricotta, muenster, chevre, they are all in here! Some are quick and easy but many need time to sit and culture. This is how the complex textures and flavors are made and there is no real shortcut to getting their (in any kind of cheese, vegan or not.) I can tell you, it's worth the wait. You'll be shocked and delighted to taste these flavors again.
