My favorite part is The Vegan Food Guide, since we are all so accustomed to food "pyramids" and the like. This section covers what foods provide the nutrition that is recommended as a minimum daily requirement, and gives examples of meal plans and actual meals.
There are resources galore if you want even more, plus some fun examples of notable vegans and their favorite foods. One important thing to remember for anyone, vegan or not - is that it's easy to be healthy or unhealthy regardless of diet. So the obvious choice is to educate yourself so you can feed yourself, your family and whoever sits at your table delicious, cruelty-free foods!
